Becky’s Carrot Casserole

 

12 oz can or ¾ lb of cooked carrots

3 eggs                                      1 cup sugar

1 tsp. baking powder                3 tbsp. flour

1 tsp. vanilla                             ½ tsp. cinnamon

 

Drain carrots and puree in blender. Add eggs and mix.

Add butter, sugar, baking powder, flour, vanilla, and

cinnamon and mix well. Pour into greased 2 quart casserole.

Bake at 400º F for 15 minutes uncovered, then at 350º F for

an additional 45 minutes.
